I have been on a cheesecake baking kick. I made this one for a St. Patricks Day party. It was super yummy. Despite all my babying and love, it still managed to crack, so I toped it with some homemade chocolate rolls. I wish I could post this recipe, but I completely made it up. I did write it down, so if anyone is just dying to try it please email me and Ill be happy to give you the recipe.
A recipe I can give you is for these “Baby Guinness” shots that my friend Alyson made. They are Kahlua with Baileys slowly pored on top. Very yummy, but really strong and thick. Drink with caution.

A few weeks ago I made my second cheesecake ever. It turned out awesome. It didn’t even crack. After the Lace Cookie disaster I promised myself I wouldn’t post a recipe unless I had 100% confidence that the recipe was correct and do-able. Having only made this cheesecake once I am a little afraid to post it. However, because this recipe was pretty easy, and it didn’t crack I decided to post it anyway. I think the original cheesecake recipe is from Cooking Light, but this is my interpretation and I totally made up the crust recipe.
Cinnamon Graham Cracker Crust:
1 cup graham cracker crumbs
1/4 cup granulated sugar
1 teaspoon cinnamon
3 tablespoons melted butter
 Preheat oven to 400°.  In a bowl mix together graham cracker crumbs, sugar, and cinnamon.  Add melted butter and mix together with a fork.  Press mixture into the bottom and 1/2 – 1 inches up the sides of a 9 inch spring-form pan.  Bake at 400° for 5 minutes.  Cool on wire rack or counter.
3 (8-ounce) blocks original cream cheese, softened
2 (8-ounce) blocks 1/3-less-fat cream cheese, softened
1 cup sugar
3 tablespoons all-purpose flour
1/4 teaspoon salt
1 (8-ounce) carton sour cream
4 large eggs
2 teaspoons vanilla extract
 Reduce oven temperature to 325°.  Beat cream cheeses with a mixer at high speed until smooth.  Combine 1 cup sugar, flour, and salt, stirring with a whisk.  Add dry ingredient mixture to cheese mixture and beat well.  Add sour cream and beat well.  Add the eggs 1 at a time, beating well after each addition.  Stir in vanilla extract.  Pour cheesecake mixture into prepared pan with cinnamon graham cracker crust.  Bake at 325° for 1 hour and 15 minutes or until cheesecake center barely moves when pan is touched.  Leave cheesecake in oven for about an hour. If your spring-form pan isn’t non stick run a knife around outside edge before letting it cool.  Then remove from oven and let cool to room temperature. About an hour  Cover and chill at least 8 hours.
You can also put this cheesecake in a hot water bath while baking. Hope you enjoy. Let me know if anyone tries it.
Charlie Pants is my favorite thing on earth! The only down side is his insatiable need to be played with. He is UNSTOPPABLE: Tennis balls, sticks, soccer balls, cat toys, or stuffed animals he doesn’t care. Charlie just wants to play fetch all day everyday. Its great really…NOT, but then I found a great toy we could both agree on. Frisbee!
Once upon a time I was super excited about Charlies love for the soccer ball. I thought wow how great is this, I can just kick the soccer ball and he will run and run. However, it turns out I am not good a kicking the soccer ball, and it really starts to hurt after a while. So now here we are, present day, and the Frisbee is our new exciting toy. Its easy to throw, it goes far, and when it hits the ground it rolls and rolls, and charlie chases and chases it. Also, its easier for him to pick up with his little underbite.
Im so excited I thought I would change the words to the slinky song to illustrate how much Charlie and I love this new toy.

I had fun tonight making these pink birthday cupcakes for a friends daughters birthday. They were super simple and fun to bake. Strawberry cupcakes with pink buttercream icing and hot pink sprinkles. Pink isn’t my favorite color, but it defiantly was exciting to just bake no fuss, pink on pink, on pink cupcakes. Took me back to being a little girl!
